Pumpkin oat muffins!

I try not to toot my own horn, but I had to post about these muffins. Remember me saying I am no fan of pumpkin? I continue to prove myself wrong. I still can't get behind pumpkin pie, but I can really scarf these bad boys down quickly and feel good about them heath wise too!



These muffins were basically a combo of whole wheat flour, all-purpose flour, 1/2 granulated sugar and 1/2 Splenda substitute, butter, brown sugar, vanilla, eggs, and oats. The recipe didn't call for an oat streusel but I thought it would add a little sweet crunch. I can't stress how much I loved these muffins, and for numerous reasons. I used my ice cream scooper to place them in baking cups, so they baked uniformly. The streusel topping was really yummy, especially considering I concocted it on my own. They came out very good looking and are still moist two days later!

I'm happy to report they were a hit at Hubby's office. It's nice to get positive feedback since usually I bake for just him and I. He also brought in my snickerdoodle cookies and none returned home. Woo! Hubby said these make a great coffee-muffin combo, so this java-lovah is quite content this morning with breakfast :)
