Vegetarian Lettuce Wraps!

I'm on a blogging roll this Sunday morning, so here is another lovely (spontaneous) recipe for y'all!

Of all our vegetarian adventures, this might be one of my top 5 as far as as Asian attempts go. I've had the lettuce wraps at PF Changs and been really happy with them, so we decided to make our own version. Unfortunately, there is no recipe for these- we made it up as we went. But I'll be your guide and try to remember the steps we took.




Edamame is just yummy, and we buy it at Trader Joe's to keep on hand. Naturally, they went in these wraps. (Good source of protein, too!) We boiled them, and really, that's all you need to do to them. They're so good on their own, but adding them to our other Asian flavors made them all the better. We then took Morningstar meat crumbles and cooked them with soy, ginger, cumin, a bit of curry (not a big fan as of late) salt, pepper, and I'm sure other things I can't recall. I also threw in some carrots and onions to add to the veggieness of it all. But the clincher of the wraps was the sauce Hubby concocted. Oh-em-gee. This was seriously awesome sauce that I would have believed came straight out of any Asian restaurant's doors. I decided not to share the ingredients because A) I can't remember and B) I like the idea of keeping it secret. OooOOoooOOoo... on the edge of your seat eh?? This is officially the secret Gaul saucey stuff that you just cannot have.



Aside from all that, these were simple and the flavor packed a punch that I really enjoyed. The only thing I recommend is having bigger leaves for the wraps so they could hold more of the filling. I would probably choose iceberg next time. These will definitely be making an appearance again in our kitchen!
