Pea pesto!

Quick, delicious post about my new favorite pasta sauce at my house. Ken has concocted a ridiculously tasty pesto, a bit astray from the traditional type. I'm never going to turn down any pesto, but this one definitely caught my culinary eye more than the others.

Basil and pesto first of all; who's going to deny this combo? I'd rather not meet you, if you're one of the crazy ones. He's made this sauce twice so far, and I asked him to write down the recipe so I could blog and share it with the online world. I can't take any credit for this pesto, so all applause goes to the hubby!

Pea pesto*
3 cups cooked peas
3 oz fresh basil
3 oz arugula or spinach
2 garlic cloves
1/2 cup olive oil
Salt and pepper to taste
Handful of almonds

*Vegan/vegetarian

Now, can you handle all the following laborious, detailed directions? Mix all of it in a happy circle using the food processor. Yep, that's it! Let the mixture blend until it reaches the slightly chunky but creamy pesto seen below.


For the BANG of taste this sauce offers, the fact it takes literally three minutes to make is a such a great way to cheat when you're having a dinner party. This pesto majorly dresses up your usual pasta dish, and booyah! Only a few minutes to prepare? Amen! People will ask about this pesto, I guarantee it. In addition, be sure you have seconds ready. Of course Ken made this a night I vowed to seriously start watching my portions. Take a guess if that actually happened.


Another tip: for "Christmas sauce", make your usual tomato sauce and top it with some pesto when you're ready to serve. The layer of pasta, tomato sauce, and pesto on top gives you a delicious Christmas recipe that's festive but still great any night of the week. We made this when we lived in Herndon and had both my parents in town and Ken's dad all over for dinner. It was a hit, to say the least. Having a husband who cooks and does a hell of a job is the best!!
