Basil and pesto first of all; who's going to deny this combo? I'd rather not meet you, if you're one of the crazy ones. Pea pesto*
3 cups cooked peas
3 oz fresh basil
3 oz arugula or spinach
2 garlic cloves
1/2 cup olive oil
Salt and pepper to taste
Handful of almonds
*Vegan/vegetarian
Now, can you handle all the following laborious, detailed directions? Mix all of it in a happy circle using the food processor. Yep, that's it! Let the mixture blend until it reaches the slightly chunky but creamy pesto seen below.
