Today I present a yummy, new addition to our usual lineup of foods. Normally Hubby is the one making the hummus in our household, and he does quite the lovely job. I decided to have a go at it after we decided we had to try and make a carrot hummus. The other night I was at Safeway picking up a few things for sweet potato burgers and saw that bags of carrots were on sale. I was excited at the thought of trying out the hummus finally!
So this hummus, as most of them are, was a pretty simple recipe. However, the woman who posted the recipe either A. was trying to kill whomever was going to eat hers or B. had no clue about spice ratios. Needless to say, I ended up using the recipe as a guide rather than literal steps. So here's how it went.
1 lb bag of carrots
Roasted garlic (3 cloves of the bulb)
1 can chickpeas (drained and rinsed)
1/2 tsp chipotle powder
1/2 tsp smoked paprika
1 tsp salt
1/4 tsp pepper
3 tbs olive oil plus more for desired consistency
1.) Roast the carrots in a tbs of olive oil in a 375 degree oven for about 1/2 hour (or until soft).
2.) You can roast the garlic at the same time as the carrots. Take a whole bulb of garlic and slice off the top 1/4 off and peel most of the skin off. (Leave a light layer). I wrapped mine in foil leaving the top of the bulb exposed to the oven. Brush with olive oil and roast for 45 minutes until caramelized. The garlic should squeeze right out of the bulb! 2.) Drain and rinse a can of chickpeas.
3.) When carrots are soft, place in a food processor with 2 tbs olive oil and blend.
4.) Add chickpeas and blend.
5.) Add spices and olive oil until desired consistency is obtained.
6.) IF your hummus is too spicy, add a tiny bit of milk and blend again. Add enough until spice is diluted to fit your tastes. (This was my secret and unexpected method of diluting chipotle-crazy-lady's original recipe)
I found this to be a big ole' success and it was a really fun attempt at a new hummus flavor. I only remembered to take a picture of the final project after Hubby arrived home and ate half of it. Guess it was a success!
