10: Chocolatey peanut butter chex mix

A quick, but nevertheless yummy post about a sweet, addictive Chex mix. There's a debate in our home about whether or not Chex mix is sweet or savory. I was raised on  sweet, Ken savory. Granted, I also have a sweet tooth and he does not. So our separate ideas of what Chex mix should be is fairly biased. Ah well. I don't go gaga over savory Chex mix, but I digress.

We had a box of generic Chex cereal and I unexpectedly noticed this recipe on the side panel of the box. All you need is 2/3 cup peanut butter and 1 cup of chocolate chips, melted together in the microwave for approximately two minutes. After one minute, mix the chips and PB and allow it to continue to melt for the next minute. When it's done melting, throw it in a bowl with the box of Chex cereal and mix very gently so as not to break the Chex pieces. Add 2/3 cup peanuts and 2/3 cup pretzel pieces and voila! A sweet Christmas treat for all!




At the end, you allow the finished mix to sit on the lined baking pans to cool. Right now, we have a whole batch sitting waiting to be scarfed down. The recipe called for powdered sugar at the end as a garnish, but I thought it would be way too sweet. If you like spice, add a sprinkle of chipotle!
